Kathy's Meat Loaf

  • 2 lbs lean ground beef
  • 4 eggs (lightly beaten)
  • 3/4 cup bread crumbs
  • 3/4 cup tomato sauce
  • 1/4 cup bacon pieces
  • 1 cup French-fried onions
  • 1-1/2 cup shredded cheddar cheese

Instructions

  1. Start a 350 degree oven. Mix first three ingredients in a large bowl and pat out a large rectangle onto a piece of plastic wrap. 
  2. Sprinkle with bacon and then French-fried onions and then the cheese. 
  3. Using the plastic wrap, roll up the meat like a cake roll with the onions, bacon and cheese inside. 
  4. Place in roasting pan and pour tomato sauce over the top. Bake for 2 hours.

Kathy's Pot Roast

  • Any beef roast
  • 1-1/2 cups beef broth
  • Salt and pepper to taste
  • 1 cup tomato juice
  • Potatoes
  • Carrots
  • Parsnips
  • Onions

Instructions

Preheat oven to 320 degrees. Place all ingredients in a large covered pan. Put in the oven at 6:00 am when you go out to work cows. When you come in with the crew for lunch between noon and 2 pm, it will be succulent and ready to enjoy. If you’d like to cook it more quickly, it will be ready in 3-1/2 hours if you raise the oven temperature to 350 degrees.
